The Tradition of Prosciutto and the Hidden Stories of the Karst

Join us for a unique experience combining culinary pleasure and Karst heritage! Your journey begins in the idyllic village of Kobjeglava, just a stone’s throw from historic Štanjel, where you’ll visit the Stara pršutarna Q KOMEL old prosciutto-making plant. There, you’ll uncover the secrets behind one of the Karst’s most prized culinary treasures – prosciutto. The guided tour offers an insight into the traditional process of salting and drying, practised for centuries thanks to the power of the strong Karst Bora wind. This is one of the oldest methods of meat curing still in use today.

After the visit, enjoy a tasting of authentic Karst flavours – delicate slices of prosciutto served with homemade bread, cheese, olives, Teran wine extract and a glass of typical wine or juice to perfectly complement the rich flavour of the prosciutto.

Next, enjoy a guided tour of Štanjel, one of the oldest villages in the Karst, where a local guide will lead you through its medieval town centre. Discover the famous Ferrari Garden, designed by renowned architect Maks Fabiani and take in the stunning views over the picturesque Karst landscape and the rolling hills of the upper Vipava Valley. Admire the mighty defence walls, silent witnesses to Štanjel’s historical significance and rich past.  Along the way, learn about the traditional lifestyle and architecture of this clustered Karst village – with narrow alleys and tightly packed houses that offered protection from the fierce Bora wind.
