The Tradition of Prosciutto and the Hidden Stories of the Karst

From the maturing of prosciutto to the tales of a stone-built Karst village.

Join us for a unique experience combining culinary pleasure and Karst heritage! Your journey will begin at Štanjel Castle, where you will visit the former Q KOMEL prosciutto-making plant, now a museum. There, you’ll uncover the secrets behind one of the Karst’s most prized culinary treasures – prosciutto. The guided tour offers an insight into the traditional process of salting and drying, practised for centuries thanks to the power of the strong Karst Bora wind. This is one of the oldest methods of meat curing still in use today.

After the visit, enjoy a tasting of authentic Karst flavours – delicate slices of prosciutto served with homemade bread, cheese, olives, Teran wine extract and a glass of typical wine or juice to perfectly complement the rich flavour of the prosciutto.

Next, enjoy a guided tour of Štanjel, one of the oldest villages in the Karst, where a local guide will lead you through its medieval town centre. Discover the famous Ferrari Garden, designed by the architect Maks Fabiani and take in the stunning views over the picturesque Karst landscape and the rolling hills of the upper Vipava Valley. You will also visit the renovated Natalija’s House, home to the permanent exhibition “The Tree, the Architect and the Garden”. The exhibition takes visitors into the creative world of the famous architect and urban planner, revealing his relationship with nature and the Karst landscape. Admire the mighty defence walls, silent witnesses to Štanjel’s historical significance and rich past. Along the way, learn about the traditional lifestyle and architecture of this clustered Karst village – with narrow alleys and tightly packed houses that offered protection from the fierce Bora wind.
